We are having a really hot February here in Perth. To keep cool, we have been eating a lot of our meals outside in our alfresco area. We live in a coastal area and everything cools down with the lovely afternoon sea breeze. We have been enjoying some refreshing non-alcoholic cocktails of an evening. This week we have been drinking Apricot Bellini’s which are so revitalising and delicious. They would be perfect for a baby shower, a brunch, or a picnic in the park. They look so pretty and colourful.

Apricot  Bellini

Made from apricot nectar, sparkling grape juice, crushed ice and a sprig of fresh mint, apricot bellinis are so delicious and simple to prepare. Apricots and their nectar are a good source of beta carotene, Vitamin A and Vitamin C so they have some health benefits as well. Apricot bellinis only takes a few minutes to make and they are a nice change from our usual summer drinks of water and diet soda. For more of a punch you can use Champagne in place of the sparkling grape juice.

Apricot Bellinis are a refreshing, non alcoholic summer drink.

Serves: 10
Ingredients
  • 750 ml bottle of sparkling grape juice , chilled
  • 500 ml apricot nectar, chilled
  • 1 cup crushed ice
  • fresh mint
Instructions
  1. Mix together nectar and crushed ice. Pour into champagne flute until it is half full. Top up glass with chilled grape juice. Add a sprig of mint and serve immediately.

    oooohhhh, we are just about to move from the UK to Perth and I have to admit that I am looking forward to some warmer weather….. though it does sound like it has been awfully hot there recently!! I have to keep this recipe handy for when we arrive and we can enjoy it alfresco……. Thanks
