Weekend Baking: Yummy Treats - A Spoonful of Sugar
Sarah has spent the afternoon in the kitchen baking up some yummy treats for the lunch boxes this week.
First up she made some Honey and Almond Bars which have a chewy texture and are deliciously honey flavoured. In less than 10 minutes they were in the oven.
Ingredients:
1/4 cup butter
1 cup brown sugar
1 egg. beaten
3 tablespoons honey
3/4 cup of plain (all purpose) flour
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1/3 cup flaked almonds
Method:
Heat oven to 180 degrees C (350 degrees F). Grease a brownie pan. Melt butter in a small saucepan, remove from heat, and add brown sugar and honey, and stir until well combined. Stir in egg. Combine flour and baking powder, then stir into the mixture. Add vanilla and fold in almonds. Pour batter into pan and bake for 25-30 minutes, or until golden. Cool in pan and then cut into pieces.
NOTE: Omit nuts and add oats if making for a young child to take to school. Check your school’s policy on nuts.
Secondly, Sarah made some Nutella and Oat Cookies – which have a lovely chocolate hazelnut flavour.
Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1/2 cup Nutella
1 egg
2 tsp vanilla
1 cup plain (all purpose) flour
1 cup rolled oats
1 tsp baking soda1/4 tsp salt
Preheat oven to 180 degrees C (350°F). Line a cookie sheet (or two) with parchment paper.
Cream the butter, sugar, and brown sugar together with an electric mixer. Add the egg, vanilla, and Nutella and mix until well incorporated. Add the flour, oats, baking soda, and salt and mix until combined.
Roll into balls, flatten with a fork, and bake for 7 minutes. Allow cookies to cool on wire rack.

I think I will try those cookies this week. I have a home based child care and those look like something they will enjoy making on our bake day. I was also wondering if you ever made a cake like what I remember my Mom making. It was iced with an icing that she would put under the broiler and it had coconut in it.
