We hope everyone has had a wonderful Easter. We had a lovely celebration with extended family yesterday, and I took along some Lemon Curd Cupcakes. They look a little like poached eggs and the bright yellow centres make them perfect for Easter or a spring celebration.
I adapted the recipe from Martha Stewart Cupcakes (Martha’s Meyer Lemon Cupcakes). I have never seen Meyer lemons locally (they sound delicious though being a lemon-orange hybrid). Instead I used some lemon and orange zest, to make the cupcakes; and used regular lemon juice for the curd.

I love Martha! I have a bag of Meyer Lemons in the fridge. They are amazing — nothing quite like them.
