We received a wonderful package in the mail yesterday from the lovely Soo of My Little Space! We were lucky enough to win a giveaway on Soo’s blog and she spoilt us with some lovely Wonderland fat quarters; garden themed stitchery patterns; and a Cotton and Paint magazine which is filled with inspiring projects and images. Thanks again Soo for our goodies – they were very much appreciated and will be put to good use 🙂
Our school holidays are now into their second week and we are keeping busy. Sarah made some delicious honey cookies today!
Honey Cookies
Serves: 20-30
Preparation time: 15 minutes or less
Ingredients
175 g unsalted butter, chopped
1 cup caster sugar
¼ cup honey
¼ teaspoon ground cinnamon
1 egg , lightly beaten
1 teaspoon vanilla extract
2¼ cups self-raising flour
Method: Stir butter, sugar, honey and cinnamon in a medium saucepan over low heat until butter has melted and mixture is smooth.
Remove from heat and transfer mixture to a large bowl. Cool to room temperature.
Stir in egg, vanilla and flour. Roll tablespoons of mixture into balls. Place 4 cm apart on two oven trays lined with baking paper and gently flatten with a fork.
Cook in 2 batches at 180°C for 12 minutes or until golden brown. Allow to cool on trays.
We have also been doing a spot of shopping – mainly winter clothing for the kids. We fell in love with these sweet little paperclips at Kikki K which has just opened near us.
We also bought some other little goodies for a friend which we had fun wrapping up.
Thanks to Rachel at One Pretty Thing for featuring our Recipe Folder on her inspiring site!
