Easy Chocolate Chip and Vanilla Cake

There hasn’t been much baking going on around Chez Sugar lately. Sarah is in exam mode so hasn’t had much time to potter in the kitchen. Fortunately she only has one exam left and will soon be on holidays. It will be great having her home over the summer and we can work on our Christmas baking and craft projects together. She is already dreaming up a fantastic menu for our Christmas dessert buffet. (Stay tuned!)

Sarah had time to make a quick recipe on Sunday. She was in and out of the kitchen in next to no time and the results were delicious. So if time is short, try our Easy Chocolate Chip and Vanilla Cake recipe. It is made in a lamington pan (31.5 x 21.5 x 3cm.), and only needs 20 minutes cooking time.

Easy Chocolate Chip and Vanilla Cake

Ingredients:

2 cups plain (all purpose) Flour
2 tsp baking powder
1 cup sugar
100 g (1 stick) butter, softened
2 Eggs
1/2 cup milk
1 tsp vanilla extract
1 cup dark chocolate chips

Method:

Preheat oven to 180 degrees C (350 deg F). Grease lamington pan and line with baking paper.
Using your stand mixer, cream butter and sugar for 2-3 minutes. Add eggs one at a time and beat well. Add vanilla essence.
Combine flour and baking powder in a clean bowl and mix well.
Fold flour and milk into mixture and stir until incorporated.Fold through chocolate chips.
Spread into pan and bake for approx 20 minutes, until mixture is set and browned.
Allow to cool, then cut into slices.

This recipe freezes well and has been appearing in the lunch boxes this week.

    This sounds yummy. Looking at the ingredients, I think it is basically a pound cake, but smaller. Hmmm…is pound cake an American thing?
