Caramel Banana Loaf recipe

The first time I was served banana bread for breakfast was on our honeymoon in Fiji many years ago. It is so delicious and the flavour of bananas is wonderful any time of the day. If you are eating it as a breakfast treat, it is especially nice lightly toasted, drizzled with maple syrup and topped with slices of fresh banana. Yumm ….

Over the years I have tried many recipes for banana cake and banana bread. Our all time favourite is Caramel Banana Loaf. I was looking for the recipe recently and was surprised that we haven’t posted it before as it is a big favourite in our home.

Caramel Banana Loaf

This week I baked a Caramel Banana Loaf for a friend. I baked it in a silicon paper liner, wrapped it with some printed greaseproof paper (purchased from this etsy store), and tied it with red and white bakers twine.

Ingredients
  • 125 g (1 stick) butter
  • ¾ cup brown sugar, firmly packed
  • 1 cup (approx 3-4 bananas) mashed bananas
  • 2 eggs
  • 1½ cups self raising flour
  • 1 teaspoon bicarb soda
  • ¾ cup low fat vanilla yoghurt
  • 1 tablespoon milk
Instructions
  1. Preheat oven to 170 deg C (375 deg F). Line loaf tin (12 x 21 cm) with silicon liner.
  2. Cream butter and sugar in small bowl with stand mixer until light and fluffy. Beat in eggs one at a time. Beat until well combined.
  3. Transfer mixture to a large bowl. Stir in banana. Stir in half sifted dry ingredients with half the combined milk and yoghurt. Then stir in remaining dry ingredients and yoghurt mixture. Stir until smooth.
  4. Pour mixture into prepared pan. Bake in moderate oven for approximately 50 minutes, or until skewer inserted in the middle of the loaf comes out clean.

Banana Caramel Loaf - A Spoonful of Sugar

I have been experimenting more with the settings on my camera and with my backdrops to make my photos whiter and brighter. This recipe gave me the opportunity to try out my new white photography board. The Man of the House bought some lengths of pine lining and used them to make a board, which he spray painted white. It is the perfect back drop for craft and food photography. I hope to get him to make more in different colours. He did a terrific job on spray painting our red chair this week.

    Hi, sorry but can you tell me if your recipe should have eggs in? You say ‘beat in each one at a time’ but you have no eggs under ingredients.

    This looks so yummy! I love banana bread and grew up eating it. Love how you wrapped this up pretty for your friend, lucky duck! I think your photos are beautiful. Kudos to you for the pics and for having a husband to support you in your blogging endeavors!
