Caramel Banana Loaf is delicious for breakfast or any time of day.
  • 125 g (1 stick) butter
  • ¾ cup brown sugar, firmly packed
  • 1 cup (approx 3-4 bananas) mashed bananas
  • 2 eggs
  • 1½ cups self raising flour
  • 1 teaspoon bicarb soda
  • ¾ cup low fat vanilla yoghurt
  • 1 tablespoon milk
  1. Preheat oven to 170 deg C (375 deg F). Line loaf tin (12 x 21 cm) with silicon liner.
  2. Cream butter and sugar in small bowl with stand mixer until light and fluffy. Beat in eggs one at a time. Beat until well combined.
  3. Transfer mixture to a large bowl. Stir in banana. Stir in half sifted dry ingredients with half the combined milk and yoghurt. Then stir in remaining dry ingredients and yoghurt mixture. Stir until smooth.
  4. Pour mixture into prepared pan. Bake in moderate oven for approximately 50 minutes, or until skewer inserted in the middle of the loaf comes out clean.
