Weekend Baking: Cinnamon Cupcakes

We are lucky enough to have a long weekend this weekend, in honour of CHOGM. It was nice having a Friday off with the family. It gave Sarah a chance to do some baking, something that has been reduced recently since she started her part time job. She made us a batch of Cinnamon Cupcakes – which tasted like donuts. They were delicious! She finished them off with a honey cinnamon buttercream frosting.

Ingredients:
3/4 cup of plain (all purpose flour)
3/4 cup cake flour
1/2 tablespoon baking powder
1 tablespoon cinnamon
1/2 cup (1 stick) butter, softened
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
Makes 14 cupcakes
Preheat oven to 180 degrees C (350 F). Line muffin tray with paper patty pan liners.
Sift together flours, baking powder and cinnamon.
Cream butter and sugar until light and fluffy. Beat in vanilla. Beat in eggs, one at a time until combined. Reduce speed and add flour mixture, alternating with milk, and beating until combined.
Divide mixture between cups. Bake approx 20 minutes and transfer to a wire rack to cool.
Frosting:
1 1/4 cups of icing (confectioners ) sugar
1/2 cup (1 stick) butter, softened
2 tablespoons honey
1/4 teaspoon cinnamon
1 teaspoon milk
With electric mixer, bear all ingredients until smooth. Using a round piping nozzle, pipe onto cooled cupcakes. Optional: Dust with cinnamon sugar to finish.

    Yum!!! We have tuesday off this week for the Melbourne Cup so there is a holiday from school on Monday as well. A lot of people have taken it so they can have a long long weekend!!! Not me, I have to work monday!

    Wow, these look delicious! I adore cinnamon, so I am definitely going to try this recipe too. I love that there’s cinnamon in the frosting too. They look so beautiful and mouthwatering in your pics.

    Lovely recipe, thank you. I made it today with gluten free flour. However your instructions don’t mention where to pop the egg whites in. I assume you beat them and fold in at the end? I replaced the two egg whites with one whole egg and put it in at the end of the butter/sugar creaming. They came out lovely and light, but that frosting is amazing!
