Apple Crumble Slice

Apples are in season in Australia so they inspired my baking this week. I made an Apple Crumble Slice – it consists of a cake like base, a layer of cinnamon flavoured apple, and then finished off with a crumble topping. It is delicious served either warm or cold, with a dusting of icing sugar.

Ingredients
  • Crumble Topping:
  • 185 g (1¼ cups) plain (all purpose) flour
  • 1 teaspoon baking powder
  • 125 g (1 stick) butter
  • ¾ cup (165 g) caster (superfine ) sugar
  • Apple Filling:
  • 5 apples (I used a combination of granny smith and royal gala)
  • 1 tablespoon butter
  • ½ teaspoon ground cinnamon
  • 1 tablespoon sugar
  • Base:
  • 100 g (0.9 stick) butter
  • 110 g (1/2 cup) caster (superfine ) sugar
  • 1 egg
  • 1 cup plain (150 g) plain (all purpose ) flour
  • 1 teaspoon baking powder
  • 1 tablespoon milk
Instructions
  1. Preheat oven to 160 deg C (320 deg F). Grease and line a 20 x 30 cm slice pan.
  2. To make the crumble: mix the flour, baking powder, and sugar in a bowl. Rub in the butter until it resembles fresh breadcrumbs.
  3. To make the apple filling: peel and chop apples. Place all ingredients into a saucepan and cook over low heat for 10 minutes, or until softened. Allow to cool.
  4. To make the base: Combine the butter and sugar in an electric mixer and beat until creamy. Add the egg and beat well. Fold through the flour, baking powder, and milk.
  5. Spread the base in the bottom of prepared pan. Top with apple filling, and then spoon over the crumble topping. Bake in oven for 40 – 50 minutes or until golden.
  6. Serve dusted with icing (confectioners) sugar.

    Can you use tinned apples and add sultanas to the middle also can you use a cake mix for the bottom layer as you do with apples sour cream slice ??

      Hi Tania – I am sure you could experiment with cake mix for the bottom layer. Tinned apples would work well – just add some cinnamon for extra flavour. Happy baking!

    Very nice. A little fiddly with the two steps for the base and crumble whereas other recipes having the same mixture for Both which is halved. I used wholemeal plain flour for the crumble to add a nutty texture. The base was very sticky and buttery and very hard to spread out on the tray but very nice flavour.

    These are absolutely delicious. I make these every year for our Macmillan coffee morning and everyone always comments on how good they are. Soooooo scrummy. For our fathers day dinner in a couple of weeks my dad has requested this for pudding – everyone loves it!

    This is THEE easiest and most delicious crumble. I make it regularly. Delicious cold as a slice but even more so heated with a big dollop of cream. Reminds me of my Nanas baking xxx
