Apple Crumble Slice

Ingredients
  • Crumble Topping:
  • 185 g (1¼ cups) plain (all purpose) flour
  • 1 teaspoon baking powder
  • 125 g (1 stick) butter
  • ¾ cup (165 g) caster (superfine ) sugar
  • Apple Filling:
  • 5 apples (I used a combination of granny smith and royal gala)
  • 1 tablespoon butter
  • ½ teaspoon ground cinnamon
  • 1 tablespoon sugar
  • Base:
  • 100 g (0.9 stick) butter
  • 110 g (1/2 cup) caster (superfine ) sugar
  • 1 egg
  • 1 cup plain (150 g) plain (all purpose ) flour
  • 1 teaspoon baking powder
  • 1 tablespoon milk
Instructions
  1. Preheat oven to 160 deg C (320 deg F). Grease and line a 20 x 30 cm slice pan.
  2. To make the crumble: mix the flour, baking powder, and sugar in a bowl. Rub in the butter until it resembles fresh breadcrumbs.
  3. To make the apple filling: peel and chop apples. Place all ingredients into a saucepan and cook over low heat for 10 minutes, or until softened. Allow to cool.
  4. To make the base: Combine the butter and sugar in an electric mixer and beat until creamy. Add the egg and beat well. Fold through the flour, baking powder, and milk.
  5. Spread the base in the bottom of prepared pan. Top with apple filling, and then spoon over the crumble topping. Bake in oven for 40 – 50 minutes or until golden.
  6. Serve dusted with icing (confectioners) sugar.
