Lemon and Coconut Slice

When life gives you lemons – make Lemon and Coconut Slice! A work colleague generously gave me a large bag of fresh home grown lemons and limes last week. I put them to good use by baking up a batch of Lemon and Coconut Slice to take in to work for our morning tea tomorrow.

This recipe is super quick to make – it only takes about 15 minutes to prepare and 35 minutes to bake. It incorporates finely grated lemon rind and juice to give it a nice lemon flavour, and is very moist. It is made in the same way you would make a brownie – melt the butter in a saucepan and then mix in all the other ingredients – too easy.

Lemon and Coconut Slice

Ingredients:

  • 250g (2.2 sticks) butter
  • 430g (2 cups) caster sugar
  • 4 eggs
  • 225g (1 1/2 cups) plain flour
  • 85g (1 cup) desiccated coconut
  • 1 tablespoon finely grated lemon rind
  • 60ml (1/4 cup) fresh lemon juice
  • Icing sugar, to dust




Method:
  1. Preheat oven to 180º C ( 350º  F). Line a 20 x 30cm (base measurement) brownie pan with non-stick baking paper.
  2. Melt the butter in a saucepan over medium heat. Remove from heat. Stir in sugar. Add eggs, 1 at a time, and stir until mixture is thick and glossy.
  3. Sift the flour over the egg mixture and stir until well combined. Stir in coconut, lemon rind and lemon juice. Spread over base of prepared pan.
  4. Bake for 30 – 40 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan to cool completely. Cut into pieces. Dust with icing sugar.
Makes 16 pieces
