When life gives you lemons – make Lemon and Coconut Slice! A work colleague generously gave me a large bag of fresh home grown lemons and limes last week. I put them to good use by baking up a batch of Lemon and Coconut Slice to take in to work for our morning tea tomorrow.
This recipe is super quick to make – it only takes about 15 minutes to prepare and 35 minutes to bake. It incorporates finely grated lemon rind and juice to give it a nice lemon flavour, and is very moist. It is made in the same way you would make a brownie – melt the butter in a saucepan and then mix in all the other ingredients – too easy.
Lemon and Coconut Slice
Ingredients:
- 250g (2.2 sticks) butter
- 430g (2 cups) caster sugar
- 4 eggs
- 225g (1 1/2 cups) plain flour
- 85g (1 cup) desiccated coconut
- 1 tablespoon finely grated lemon rind
- 60ml (1/4 cup) fresh lemon juice
- Icing sugar, to dust
Method:
- Preheat oven to 180º C ( 350º F). Line a 20 x 30cm (base measurement) brownie pan with non-stick baking paper.
- Melt the butter in a saucepan over medium heat. Remove from heat. Stir in sugar. Add eggs, 1 at a time, and stir until mixture is thick and glossy.
- Sift the flour over the egg mixture and stir until well combined. Stir in coconut, lemon rind and lemon juice. Spread over base of prepared pan.
- Bake for 30 – 40 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan to cool completely. Cut into pieces. Dust with icing sugar.
