Lemon Pound Cake

On our recent trip to the USA we encountered some freezing weather in New York and Washington DC. To warm up, we popped into Starbucks regularly for a coffee or hot chocolate.  While we were there we discovered the Iced Lemon Pound Cake which quickly became our treat of choice. We love the intense lemon flavour of this cake  – so delicious! I have baked lots of lemon recipes (including Lemon Bundt Cake, Lemon Yoghurt Cake, and Lemon and Coconut Slice) but had never made a lemon pound cake until today.

When my family requested Lemon Cake, I did an online search and it turns out there are lots of recipes claiming to be just like the Starbucks Lemon Pound Cake. I used the copycat Starbucks Lemon Pound Cake Recipe that I found over at the 36th Avenue with a couple of modifications.  I didn’t have any Lemon Essence in the pantry so omitted that ingredient. I made my own lemon frosting using lemon juice, softened butter, milk and icing (confectioner’s sugar). It tastes amazing and won’t last long.

    Looks yummy! Would you mind sharing the recipe for the frosting? I wasn’t sure about the amounts of the ingredients.

      Thanks Veronica – I used a cup of icing sugar (confectioners/powdered) sugar, 1 tablespoon softened butter, 1 tablespoon lemon juice, and 1/2 tablespoon of milk. Beat together with a knife until smooth. Add more sugar until it is at the consistency you like (or add more milk if it is too stiff).

    Is there a way of getting the recipe for the Lemon Pound Cake. It looks so good and love anything with lemon in it. Do you have a cookbook with the recipe in it.
