Easy honey coconut cookie recipe from A Spoonful of Sugar

Recently, Sarah has been looking in some of my grandmother’s old cookbooks for baking inspiration. The recipes always remind me of my childhood treats. Simple, wholesome baked goods – not as rich or sweet as many of the recipes popular today. One of Sarah’s current favourite cookbooks is the Australian Women’s Weekly “100 Delicious Biscuits and Slices” which was first published in 1972.My Mum also had a copy of this book and these recipes are some of the ones that I made when I was first learning to cook. Sarah has been baking some of my old childhood favourites recently.

Honey Coconut Cookies are really quick to prepare and only need around 10 minutes in the oven. The recipe makes a large batch of 3 dozen, and they freeze well. Perfect for including in the school lunch boxes!

Honey Coconut Cookies are a delicious cookie and are quick to prepare from pantry staples.

Serves: 36
Ingredients
  • 125 g (4 oz) butter
  • 1 tablespoon honey
  • 1 egg yolk
  • 1½ cups self raising flour
  • 1 cup sugar
  • ½ cup coconut
Instructions
  1. Melt butter and honey over low heat, cool slightly, add egg-yolk; mix well.
  2. Combine sifted flour, sugar, and coconut, add to butter mixture. Mix until well combined.
  3. Roll teaspoonfuls of mixture into balls. Place on lightly greased oven trays, and press flat. Bake in moderate oven for 10-12 minutes. Allow to cool on trays
