Funfetti Cookies

September 13, 2012 By Spoonful of Sugar - 4 Comments

If you love buttery sugar cookies, you will enjoy these funfetti cookies which have 100’s and 1000’s (aka sprinkles) added to the cookie dough. Kids of all ages will enjoy these as a fun treat. Our cookies have been rolled in sugar but if you want extra fun, you could roll them in 100’s and 1000’s as well for an extra colourful cookie.

Funfetti Cookies

  • 4 tbsp (1/4 cup) butter, softened
  • 1/2 cup sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 3/4 cup plain (all-purpose) flour
  • 1/3 cup 100’s and 1000’s (sprinkles)
  • 1/4 cup sugar, for rolling

    Makes 18 cookies
Preheat oven to 180 degrees C (350 degrees F). Line cookie sheet with baking paper.  Set aside. Pour 1/4 cup sugar onto a plate to use for rolling.  Set aside.
Cream the butter and sugar together on medium speed using an electric mixer.  Beat in egg yolk, vanilla extract, and baking powder.  Add flour, and mix until a dough forms.  Dough will be thick. Gently mix in sprinkles.
Roll dough into balls.  Roll the balls into the reserved sugar and bake for 9-10 minutes until golden.
Allow cookies to cool for 2 minutes on the cookie sheets before transferring to a cookie rack to cool.
