Blueberry, Lime, and Cream Cheese Loaf

If you follow us on facebook and pinterest, you may have noticed that we pinned a recipe for Blueberry, Lime and Cream Cheese Pound Cake this week. We were recently gifted a big bag of limes so have been looking for some new lime recipes to try.

Blueberry Lime and Cream Cheese Loaf is delicious. The cream cheese gives the cake a lovely texture. Studded with blueberries, it is moist and satisfying. The mixture includes 2 tablespoons of finely grated lime zest, which used two of our limes and adds a lovely flavour.

Blueberry, Lime and Cream Cheese Loaf


Ingredients:

1 1/4 cups plain (all-purpose) flour
1 teaspoon baking powder
1/4 teaspoon salt
115 g (1 stick) unsalted butter, room temperature
115 g (4 oz)  cream cheese, room temperature
2/3 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 tablespoons lime zest
2/3 cup fresh blueberries

Method:
Preheat oven to 175°C (350°F). Butter and line a 9 x 5 loaf pan. Set aside.

In a medium bowl, whisk together flour, baking powder and salt. Set aside.

In stand mixer, beat together cream cheese, butter and sugar until light and fluffy, about 2 minutes. Add eggs one at a time, thoroughly mixing after each addition. Add vanilla extract and lime zest, mixing until combined.

Pour flour mixture over the batter mixture. Using a large rubber spatula, gently fold in the flour until it’s completely mixed in and there are no pockets of dry flour. Fold in the blueberries.

Transfer batter to prepared baking loaf pan. Bake for 55-65 minutes, or until toothpick inserted in the centre comes out clean. Place on wire rack to cool.
