Almond Cream Slice

I baked up a special treat for the teens this afternoon – one is in the middle of Year 12 (semester 1) exams and the other has been feeling unwell this week.  Almond Cream Slice is a recipe from an old cookbook that I used to make frequently but haven’t made for many years. It was just the thing to provide some cheer on a cold wet afternoon.

Almond Cream Slice


Ingredients:
1/2 cup cream (thickened or whipping cream)
1/2 cup castor sugar
1 teaspoon vanilla essence
2 eggs
1 cup self raising flour

Almond Topping:
90g butter
1/3 cup castor sugar
1/4 cup cream
1 tablespoon plain flour
1 cup flaked almonds

Grease a 25 x 30 cm swiss roll pan, line base with baking paper.

Combine cream, sugar, essence and eggs in a bowl and whisk until combined. Whisk in flour. Spread mixture into prepared pan and bake in moderate oven (160 deg C) for 15 minutes.

Spread with topping, bake further 15 minutes or until golden brown.

Almond Topping:
Melt butter in saucepan, stir in sugar, cream, and flour. Stir constantly over heat until mixture boils and thickens. Gently stir in almonds.

Edit: The slice has a cakey texture.

    Hi could you tell me what kind of cream you used, in the UK we have single, double and whipping. Have never come across cream in a recipe like this before so would be very interested in giving it a go!

    I have a very similar recipe with the exception that I add a layer of raspberry jam before I spread the topping on top. Also very nice.

    Hi, will love to try out this recipe but I haven’t done a lot of baking. One question, what sort of cream do you use? I’m also in Australia so I can most likely get the same cream you use in this recipe. You mentioned moderate oven, what oven setting is that. Hope to hear back from you. Thanks so much.

    Hi, I have just tried this recipe and it turn out alright. However the base was more like spongey cake. I originally thought the base was meant to be crusty and hard (prefer it that way). Did I do something wrong ? Any feedback will be greatly appreciated. Thanks.

    Hi Anonymous – the slice has a cakey texture – it is not supposed to be a hard biscuity base.

    Hi again, thanks so much for clarifying that. Half of the family like them as they are (cakey) but the rest said they prefer the base to be hard/crusty. Will try to find out if I can make the base crusty/hard (just as alternative option). Thanks again.

    Almond slice a big hit at the mothers group! Very yum will make this again, maybe with a bit of added lemon zest…mmm there’s a thought.
