Pancakes etc

Sarah and I have been enjoying reading all of your lovely comments on her Think Pink Giveaway Post. It is easy to see why Pink is such a universally popular colour!

In celebration of Shrove Tuesday , I made up a batch of Apple and Cinnamon Pikelets. They were delicious, even if they didn’t look quite as good as the ones I made for Du Jour. The kids enjoyed the last of them in their lunchboxes today. 

Here is the recipe:

Ingredients:

1 cup self raising flour, sifted
One quarter teaspoon of bicarbonate of soda
Pinch salt
3 tablespoons sugar
Two thirds cup milk
1 egg
2 teaspoons butter, melted
1 apple, peeled and grated

Topping:
1 teaspoon cinnamon
2 tablespoons sugar

Method:
Add sugar to dry ingredients. Mix to a smooth batter with beaten egg and milk. Add melted butter. Stir though grated apple.
Heat and grease skillet. Drop dessert spoonfuls on to pan. Cook until bubbly on top, light brown underneath. Turn , cook other side.
Serve with cinnamon sugar sprinkled on top.
Makes approximately 18

I have just finished making some mats to use on the bedside tables in the guest bedroom. They match these cushions. 

I received this lovely scrap pack in the mail last week as part of the Amitie Blog VIP. I have already put the fabrics to good use in a secret project.

    Oh! I used to love it when my Mum made pancakes for Shrove Tuesday! We gobbled them down. I’d long forgotten about it. Thanks for reminder. I may have a go at that recipe. Yum!

    love pancakes…i slice up banana and pop the slices on after i pour them, then flip them over …and of course sprinkle with lots of sugar and gobble them up…yum…
