Vanilla Macarons

We love school holidays – it means that Sarah has more time to potter around in the kitchen. This week she made some amazing vanilla macarons, coloured a delicate shade of pink. She used the basic macaron recipe from Zumbo, and then piped some vanilla buttercream between the macaron shells to sandwich them together.

The macarons tasted amazing and needless to say, they didn’t last long! This has been Sarah’s most successful batch of macarons to date. Adriano Zumbo’s recipe is a little different to the previous recipes she has used. This recipe uses the Italian meringue method – a sugar syrup at the right temperature is incorporated into the egg whites while they are being beaten. What we love about Zumbo is that it includes a basic recipe for the macaron shells and then there are 23 variations – including salted milk chocolate caramel, rice pudding, strawberry bubblegum, vegemite and many more. Sadly school resumes next week so it may be a while before we are next eating macarons.

    They always look so pretty. I have never had a macaron. My dd is allergic to nuts and I never get or make anything she can’t have and I don’t generally eat away from home unless I’m with my kids or family. I wonder if there’s an alternate macaron. lol

    ok just before I hit submit I decided to do a quick search and there are recipes for almond free macarons. I’ll have to try to make some.
