Chocolate Coconut Bars

Every weekend we bake up a few treats to include in our lunch boxes during the week, and to have with our weekend coffee. We are always looking for recipes that freeze well. That way in the mornings when we are preparing the lunches we can quickly wrap the morning teas in plastic wrap and pop them in the lunch boxes.
Last weekend Sarah baked Chocolate Coconut Bars. The recipe is from an old cookbook of mine, The Big Book of Beautiful Biscuits, which was one of the very first cookbooks I bought and has been well used over the years . It is a delicious slice that ticks all the boxes.

Chocolate Coconut Bars

Ingredients

Base
125 g (4 oz) butter
1/2 cup brown sugar, firmly packed
1 cup coconut
1/2 cup plain flour
1/3 cup self raising flour
1 tablespoon cocoa
1 egg
Icing
1 cup icing sugar
1 tablespoon cocoa
1 teaspoon soft butter
1 tablespoon milk
coconut to sprinkle on top 
Base 
Melt butter over low heat. Stir in sugar, coconut, sifted flours and cocoa, then lightly beaten egg. Spread mixture evenly over base of well greased 28 x 18 cm (11 x 7 inch) tin. Bake in moderate oven for 20 minutes. Spread with icing immediately, stand for 10 minutes. Sprinkle with extra coconut. Cut into bars and cool in tin.
Icing
Stir icing sugar and cocoa into bowl. Stir in butter and enough milk to give a thick paste.
