If you are after a refreshing summer drink that is light in calories, delicious, and non alcoholic, you should try our Watermelon Coconut Drink. Watermelon water (agua de sandia) is a drink we first tried when we were on holiday in Mexico. It was available at all the taqueria’s and goes perfectly with spicy Mexican food. It is wonderful in hot weather, and is made by puréeing diced watermelon with cold water, and adding sugar to taste.

We wanted to put our own slant on this classic Mexican drink by adding some coconut juice. Coconut juice (or coconut water) is sourced from the clear liquid found inside young green coconuts.  It is a great source of potassium which is beneficial for rehydration. Watermelon is rich in Vitamin C, Potassium, and Beta Carotene. So this drink is healthy as well as being delicious!

Our Watermelon Coconut Drink is made by puréeing seedless watermelon, with chilled coconut juice. We added some crushed ice, a sprig of fresh mint, and a slice of lime to our plastic glasses. It is so refreshing on a hot day and goes perfectly with a BBQ or when relaxing poolside.

Watermelon Coconut Drink is a twist on the classic Mexican drink, Agua de Sandia.

Ingredients
  • 6 cups seedless watermelon, diced
  • 2 cups coconut juice (coconut water)
  • 1 lime, sliced
  • sprig of mint
  • ice
  • (optional: sugar to taste)
Instructions
  1. In a blender, puree watermelon and coconut juice until well blended. Add sugar to taste.
  2. Crush some ice. Stir through drink.
  3. Add ice cubes to glasses. Pour drink on top of ice. Add a sprig of mint and slice of lime.

Thanks to Kitchenware Direct and Swish Plastic for supplying the Plastic Highball Tumblers. The glasses are made from polycarbonate, not acrylic which make them look and feel like real glass. So much classier than cheap plastic glasses and much safer around the pool.
