100 Years of Pyrex + Lemon Meringue Pie

June 10, 2015 By A Spoonful of Sugar - 11 Comments

Sponsored by World KitchenLemon Meringue Pie made using Pyrex Anniversary CollectionWe are passionate about family baking, and preparing tasty treats and desserts for our family and friends. One of our favourite iconic brands, Pyrex, is celebrating its 100 year anniversary this year – it has been part of Australian kitchens and kitchens around the world for decades. I remember Pyrex was part of our family mealtimes growing up. My Mum still has a few vintage Pyrex pieces she was given as wedding gifts, as well as a few pieces from my Grandmothers kitchen. I wish we had kept more – they are real collector’s items these days.

Vintage Pyrex

Vintage Pyrex circa 1960

Did you know that Pyrex strengthened glass was originally used as lantern globes on railways? A railway engineer’s wife used the same heat resistant glass to bake a cake and an iconic brand was born.  There has been 65 million pieces of Pyrex sold in Australia to date. We use a lot of Pyrex products in our home – they are so practical and hard wearing. They can go from the stove top or oven, to the table, and then straight into the dishwasher – perfect for time poor Mum’s. We especially love the mixing bowls, measuring jugs, and casserole dishes. In our busy family, we usually have a few of the plastic lid casserole dishes in the freezer filled with casseroles, ready for a quick microwave meal before the teens head out to work.

Pyrex Anniversary Collection

To celebrate its anniversary, Pyrex has released some stylish, limited edition 100-year anniversary products inspired by popular and classic Pyrex designs from across the decades, including the iconic pie plate, measuring jug and storage glasses in a fun dot pattern. Who can resist those dots! These are must have items for home cooks and fun collector pieces for Pyrex lovers. You can find the anniversary range at Big W, Myer, David Jones and Harris Scarfe.

Pyrex Anniversary Collection

To test out the new Pyrex bakeware, I prepared one of my families favourites – A classic Lemon Meringue Pie. It is made with a shortcrust pastry, filled with a tangy lemon filling and topped with a soft meringue. Delicious!

The Pyrex Pie Dish is nice and deep and  resulted in evenly browned pastry in the pie base.

Serves: 8
Ingredients
  • Prepared and precooked, shortcrust pastry base (use your favourite recipe or use ready made pastry sheets)
  • 50g (1/3 cup) cornflour
  • 125ml (1/2 cup) water
  • 250ml (1 cup) fresh lemon juice (about 6 lemons)
  • 430g (2 cups) caster sugar (superfine sugar)
  • 60g (1/2 stick) butter, coarsely chopped
  • 4 eggs, separated
Instructions
  1. Make sure your pastry base is pre-cooked and cooled.
  2. To make the lemon filling, combine the cornflour, water, lemon juice and half the sugar in a saucepan. Use a whisk to stir over medium heat for 4-5 minutes or until the mixture boils and thickens. Continue to cook, stirring constantly, for a further 1 minute. Remove from the heat. Whisk in the butter and egg yolks.
  3. Fill the pastry shell with the lemon filling. Place in the fridge for 2 hours or until completely cool.
  4. Preheat oven to 190°C (375 F) Use an electric mixer to beat the egg whites until soft peaks form. Gradually add the remaining sugar, 1 tablespoonful at a time until the mixture is thick and Spoon over the meringue mixture and spread to the edge of the pastry. Use the back of a spoon to create peaks. Bake in oven for 5 minutes or until the meringue peaks are light golden. Set aside to cool completely. Serve.

Love my old pyrex too and am always on the lookout for small dishes and casseroles in charity shops. And yes they are useful in my craft space. My best find has been the pink gooseberry cinderella mixing bowls – oh they are gorgeous! Only three of the set of four but I’m hopeful of finding that missing bowl one day! I do hope they have that anniversary pyrex in the UK too. Thanks for sharing.

Your mixing bowls sound like a fantastic find! Hope you track down the missing bowl one day 🙂 You should be able to find the anniversary Pyrex in the UK (try Morrisons).

Thanks Whitney – hope you enjoy our pie recipe! It looks like corn flour and corn starch are the same thing according to my google search. Corn flour is the Australia/UK terminology for corn starch.

A lot can change in 10 years ❤️ It’s been fun look A lot can change in 10 years ❤️ It’s been fun looking back at where I was in 2016 and how far life has come since then. Swipe for a little trip down memory lane.Back in 2016, my priorities were firmly centred around family. I was working full‑time, sewing in the guest room, sharing tutorials on my blog, and slowly dipping my toes into selling a handful of patterns on Etsy. It was a busy, full season — and creativity was something I fitted in around everything else.  Fast forward to 2026… I’m now retired and living the creative life I once dreamed of. My kids have grown up and are living in their own homes nearby. My husband and I are free to travel, explore, and enjoy this stage of life. And I get to spend my days designing, sewing, and connecting with this beautiful community.Life looks different now — in the best possible way. Were you following me back then, or what has changed for you over the past 10 years? If you’ve ever wanted to add eyelets or grommets t If you’ve ever wanted to add eyelets or grommets to your sewing projects, here’s a quick look at how I install them using my DK93 snap press. It’s the same tool I use for snaps — and it makes installing eyelets beautifully quick and consistent. For this Ribbon Pouch, I used the Liberty Gifts from the Garden collection (printed on Lasenby cotton and released in January 2026). The colours and motifs pair so well with the little ribbon tie detail. Here’s how to install the eyelets:Punch out the four holes using a hole‑cutting die.Place the eyelet into the hole.Press it into place using the snap press. That’s it — easy peasy, and it gives the pouch such an elevated, professional finish. The Twirling Treasures Hot Pad & Placemat Set show The Twirling Treasures Hot Pad & Placemat Set showcases one of my favourite FPP designs — a stunning kaleidoscope‑style block that always turns out beautifully. Kaleidoscope blocks are some of my most popular FPP patterns, and this set is such a fun way to use them.  This set includes six sizes, making it incredibly versatile: use them as hot pads, trivets, placemats, or simply as a way to add a pop of colour to your kitchen. For these samples, I went with a monochromatic scrap‑busting approach, pairing fabrics from the same colour family with a low‑volume background. The black‑and‑white striped binding adds such a crisp, modern finish. It’s a wonderful project for building your FPP confidence — and a fantastic way to use up those treasured scraps. The Twirling Treasures Hot Pad set is our Pattern of the Week.
