Pineapple Coconut Drink

pineapple coconut drink Whenever we go on a tropical holiday, one of my treats is to indulge in a pina colada whilst relaxing under a palm tree. Bliss! My choice of cocktail may be reminiscent of the ’80’s but they are really good. There is something about the magical flavours of pineapple and coconut that never fail to make me feel refreshed and relaxed. This weekend we have had a long weekend, and although it is March and the start of autumn in our part of the world, it is still really hot. To cool down and to celebrate the end of a busy weekend, we made some Pineapple and Coconut Drinks. These are alcohol free and very delicious!

Pineapple Coconut Drinks are easy to prepare – simply mix the ingredients together in the blender until well combined. If you don’t have any fresh pineapple, you can add some unsweetened canned pineapple pieces. For a more adult version, you could add some rum.

Pineapple Coconut Drinks are a refreshing tropical drink - perfect for summer entertaining.

Serves: 4
Ingredients
  • 11/2 cup pineapple juice
  • ¾ cup chopped pineapple
  • 1 cup coconut cream
  • ¾ cup crushed ice
  • To serve: sliced lime and sprig of mint
Instructions
  1. Crush ice in blender.
  2. Add all the ingredients in the blender and blend until pineapple is crushed and ingredients are combined.
  3. Serve in martini glasses with a slice of lime and a sprig of mint.

Pineapples are a great source of vitamins and minerals, especially vitamin C. Preparing fruit based summer drinks in your blender can be a fun way for your family to give their vitamin levels a boost.
