Banana Cupcakes

Banana prices are finally starting to fall and they are now back on our weekly shopping list. I had a few over ripe ones that needed using and it was a treat to use them in some baking. I made a batch of Roasted Banana Cupcakes from Martha Stewart Cupcakes Book.(which continues to be one of our most well loved cookbooks). You roast the banana in their skins for 15 minutes, allow them to cool, and then make up the recipe. Roasting really helps to bring out the full banana flavour.
You can find Martha’s Banana Cupcake recipe here (roast your bananas first to accentuate the flavours). I finished mine off with a swirl of cream cheese frosting, and a banana chip for some texture (plus I dislike how sliced bananas go brown so quickly!).

The cupcakes are incredibly moist and delicious! I don’t think these ones will last long…

    I made and posted banana muffins this week but these look delicious, will definately have to try them! I am so happy bananas are cheaper again now!

    Banana is a popular fruit here in Brasil. We love it! There are lots of kinds of bananas, in different tastes as well.

    Do you think you could do this with frozen bananas? When our banana’s can’t sit in the fruit bowl anymore I put them in the freezer and then use them for cooking or for smoothies etc. I’m wondering if after they have defrosted if they could be roasted. I love that cookbook too – have you tried the Danish Dough? It was time consuming but relatively easy. Really amazing and impresses everyone!

    Wow, these cupcakes look and sound delicious! I adore bananas so I can’t imagine the price being too high to buy regularly. I’ve never thought of roasting bananas – bet it really brings out the flavor.

    Yummy!!! Yes our banana prices are slowly dropping too. My parents just visited from the UK and were horrified to see that bananas are cheaper in England than up here in Cairns where they are actually grown!! Bet they’re tastier there though!! 🙂

    I made them… the recipe was great ( even roasted the bananas!)… but since we aren’t frosting lovers, I added two handfuls of chopped pecans to the batter. Scrumptious!
