I love to bake with chocolate! This is what I have been making this week to take to school.
First up another batch of my Best Ever Choc Chip Cookies. Here is the recipe Janelle as requested!
250g butter, softened 1 teaspoon vanilla extract ¼ cup brown sugar 1 cup castor sugar 1 egg 2 cups plain flour 1 teaspoon bicarb soda 1 cup milk choc chips
Preheat oven to 180 deg C. Line baking trays with paper. Beat butter, extract, sugar, and egg in a small bowl until light and fluffy. Stir in sifted flour and soda. Sir in choc chips. Roll into small balls. Place about 5 cm apart on trays. Bake for approx 12 mins.
Makes 48.
I have also made these M & M Cookies.
250 g butter 1 ¼ cup icing sugar 1 teaspoon vanilla extract 2 cups plain flour ½ cup rice flour 1/3 cup cornflour 2 tablespoons milk 2/3 cup mini M &M’s
Beat butter, sifted icing sugar, and extract in a small bowl until light and fluffy. Transfer to a large bowl. Stir in sifted flour and then milk. Stir in M & M’s. Divide mixture in half. Knead each half on a floured surface until smooth. Roll each half into 25 cm logs. Wrap each log in baking paper, refrigerate about 1 hour until firm. Preheat oven to 160 deg C. Line baking trays with baking paper. Cut the logs into 1 cm slices. Place about 3 cm apart on trays. Bake approx 20 minutes.
Makes 48.
The recipes are both from this book (although I have adapted the choc chip recipe). I am really looking forward to the weekend. I am going horse riding tomorrow with some friends.
They look mouthwateringly tasty. I’m off to find myself a cookie now… although it will never match the deliciousness of that smell that fills the house with freshly baked ones. Yum!
yum these look so nice sarah… I did some cookie baking myself today and made up a batch of Anzac Biscuits… they are half eaten already… I think if I made these they would be none left…
I know just by looking, that those cookies are lethal, unlikely to last an afternoon and most definitely baked within the next 24 hours. Thank you for the excellently timed recipes!
Yum Yum, may have to let my daugher loose on these yummy biscuits.
Both kinds of cookies look delicious — and your pictures are great too! I can almost smell them. Mmmmm.
Can I go to school with you? I’ll be good … chuckle! They look dee-lish! TTFN ~Marydon
