Never Fail Chocolate Cake Recipe by A Spoonful of Sugar

During my childhood, all family celebrations always included a Chocolate Cake baked by my Mum or Nan. My earliest baking adventures always involved chocolate cake. This recipe, dubbed the Never Fail Chocolate Cake, is still a firm favourite with my family. Light and moist (an low in fat) it can be whipped up quickly, and is always a crowd pleaser. I have inherited my Nan’s cake plate, that always made an appearance at birthdays and celebrations. It always brings back memories of our family gatherings.

Never Fail Chocolate cake is a light, moist cake that is easy to prepare. Guaranteed to be a crowd pleaser.

Ingredients
  • 2 tablespoons cocoa, sifted
  • 1 cup self raising flour, sifted
  • 1 cup sugar
  • Three quarters cup milk
  • 2 eggs
  • 3 Tablespoons butter, melted
  • Vanilla essence
  • Icing:
  • 1 cup icing sugar
  • 1 Tablespoon cocoa, sifted
  • 1 teaspoon butter, softened
  • vanilla essence
  • boiling water
  • moist sweetened coconut
Instructions
  1. Preheat oven to 180 °C (355 degrees F). Grease and line a 22 cm ring pan (9 inch).
  2. Combine dry ingredients in bowl. Make a well in the centre and add milk, eggs, butter and vanilla.
  3. Mix on low speed until just combined. Increase speed and beat well for 3 minutes or until changed in colour.
  4. Pour into prepared tin and bake for 30 -40 minutes, or until cooked when tested. Place tin on wire rack to cool. Spread cold cake with icing.
  5. Icing:
  6. Sift icing and cocoa together. Add butter and essence. Add boiling water a teaspoon at a time until it is at a spreading consistency. Spread cake with icing and sprinkle coconut on top to decorate.

    Yum. This looks really tasty. I don’t have a ring tin. What tin can be used instead?

      You could use a bundt tin in place of a ring tin. If you use a round cake tin or a loaf pan, you will need to adjust the cooking time.
