We have a flourishing mint plant near our clothesline. It doesn’t get much attention, just a bit of water now and then but it always gives us a good supply of fresh mint. What we love about mint is that it has a fresh, aromatic, sweet flavour. It is a very versatile herb and can be used in teas, drinks, jellies, syrups, ice creams. We use it to make a lovely mint sauce for our Sunday night lamb roast. One of mint’s great properties, is that it is a good treatment for stomach pain, nausea and sleeplessness. It is exam time in our home for the teens, so they are drinking lots of mint tea to help them study.

Did you know that mint is really easy to freeze? It can be stored in the freezer for several months, and is great added to flavoured waters, soups, salads, and more. Check out our step by step instructions for freezing mint.
Lime and Mint Ice Cubes are great added to water and summer drinks.
One of our favourite fruity drinks is Watermelon Coconut drink.
Mint is the perfect embellishment for Pineapple Coconut drink.
Apricot Bellinis are a lovely brunch drink, perfectly finished with a sprig of fresh mint.
If you only have room in your garden for a couple of herb plants, mint is a hardy and useful herb to have on hand to add to drinks, teas, salads, soups and more.

I have several types of mint – regular, apple, grapefruit, lemon, and probably others I don’t remember because their plastic tags have gone with the wind (or mower!) They are all great.
I just like to eat it freshly picked from the plant.
And it’s one of the easiest herbs to grow! Plant it and forget about it!
