Chocolate caramel brownies contain chunks of jersey caramels. Delicious as a treat or served with ice-cream as a dessert.
Ingredients
175 g (1½ sticks) butter, chopped
200 g (7 oz) dark chocolate, chopped
1 cup brown sugar, firmly packed
3 eggs, lightly beaten
1⅔ cups plain (all purpose) flour
200 g (7 oz) Jersey Caramels, chopped
Instructions
Melt butter and chocolate in a heatproof bowl over a saucepan of simmering water. Stir in sugar, eggs, sifted flour and Jersey Caramels. Mix well. Pour mixture into a greased and lined lamington or brownie tin.
Bake at 180 degrees C (355 deg F) for 30 minutes or until firm to touch. Leave in tin for 10 minutes before turning onto a wire rack to cool.
To serve, cut into rectangles and dust with icing sugar.
