Apricot Bellinis are a refreshing, non alcoholic summer drink.
Ingredients
750 ml bottle of sparkling grape juice , chilled
500 ml apricot nectar, chilled
1 cup crushed ice
fresh mint
Instructions
Mix together nectar and crushed ice. Pour into champagne flute until it is half full. Top up glass with chilled grape juice. Add a sprig of mint and serve immediately.
