Banana and White Chocolate Chip Cupcakes

Bananas and white chocolate chips are a perfect pairing of ingredients. One of our favourite cupcake recipes is banana and white chocolate chip cupcakes. They are wonderfully moist and full of flavour. They are amazing straight from the oven while the chocolate chips are melty. They don’t really need any frosting, although a caramel frosting would be a lovely addition if you can’t resist adorning them.

Banana and white chocolate cupcakes are really quick to prepare, so are a great treat when time is short. They freeze well and are a sweet addition to the school or work lunchbox. If your home is anything like ours, they won’t last long!



Ingredients:
125 g ( 1 stick + 1 tablespoon) unsalted butter
200 g (1 cup) caster (superfine) sugar
1 teaspoon vanilla extract
3 ripe bananas, mashed
60 ml (3 tablespoons) milk
2 eggs
1 teaspoon bicarbonate of soda (baking soda)
1/2 teaspoon baking powder
300 g (2 cups) plain (all purpose) flour
100 g (1/2 cup) white chocolate chips

Makes 12 cupcakes

Preheat oven to 180 deg C (355 deg F).

Melt butter in a saucepan, Take off the heat and add the sugar, vanilla, and soft bananas. Stir in the milk and eggs, and beat with a wooden spoon until well mixed. Add the bicarb soda and baking powder, mixing in well. Stir in the flour and chocolate chips and stir until just combined. Do not overmix.

Spoon the mixture into the baking cups. Cook for 15- 18 minutes until golden and springy on top.

    Well I was about to do some serious blog reading but now I guess I am off to the kitchen to try these out. Purely in the interest of using some very ripe bananas you understand, it is nothing to do with how yummy they look.

Wherever you are in the world, I hope you were able to create your own sunshine today.

This is a throwback photo to 2015 when I made my first ever dresden plate. My technique has improved since then but I still love the colours in this photo. There is something about bright pink and yellow together that makes me happy. Looking forward to the weekend when I get more sewing time.
